2 1/2 cups whole wheat flour
1 cup maida
1 1/2 teaspoon instant dry yeast
1 teaspoon salt
1 tablespoon sugar
1/3 cup (80 ml) vegetable oil (I used half ghee & half oil)
1/2 cup (120 ml) milk
1 cup (240 ml) water (room or warm temperature)
In a large bowl, combine all the ingredients.
Knead by hand or in the mixer for at least 10 minutes.
Let hatch with a damp cloth for 45 minutes to 1 hour till it doubles.
Knock down and flatten the dough, roll it, tuck in the edges and place the dough in a bread pan. It should fill atleast 2/3 of your loaf tin.
Let it grow a second time for 30 minutes.
Egg wash (optional)
Take an egg. add 1 tablespoon milk to it. Beat till smooth and brush over the top surface. Sprinkle seeds if your choice.
Bake for 50 minutes at 180 ° C (cover the top with aluminium foil half way.
Take it off the bread pan rest, cool (till it feels cool, not even warm) and slice with a long sharp serrated knife.
