Raw Mango & Carrot Rice

Raw Mango Carrot Rice

  • 2 cups cooked rice
  • 1 grated raw mango
  • 2 small grated carrots
  • 1 finely chopped onions
  • 1 spring of curry leaves
  • 1-2 green chillies
  • ¼ tsp turmeric powder
  • 2 tbsp urad dal
  • 2 tbsp channa dal
  • 1 tsp mustard seeds
  • 2 tbsp oil
  • Salt to taste

Garnish (optional)

  • 3 tbsp roasted white sesame seeds
  • 3 tbsp fried peanuts

Heat oil in a pan. Add mustard seeds and wait until it crackles. Next add urad dal and channa dal and fry till golden brown. Then add onions, green chilies, curry leaves and saute till onions turn translucent. Next add grated raw mango, carrots, salt and turmeric powder and mix well. Cook for 3-5 minutes on medium low flame. Add cooked rice and mix gently until all the rice is coated with the mango-carrot mix. Finally add roasted sesame seeds and fried peanuts, mix again. Serve hot.
