Konkani Bitter Gourd & Raw Mango Curry

Konkani Karela raw mango Curry

  • 250 gms bitter gourd cut lengthwise, deseeded and cut into 1cm semi-circular pieces. Apply some salt and keep aside for 30 minutes.
  • 1 small mango cut into small pieces
  • 3 green chillies
  • 15 garlic pods
  • 3 dry red chillies cut into bits
  • 2tbsp jaggery

Heat 3 tsp oil in a pan, add the garlic and fry till it turns brown then add cut red dry chillies fry for a minute and add the bitter gourd, mango and green chillies. Add 50 ml water, cover the pan and cook till the bitter gourd is cooked, then add jaggery and salt to taste. Cook till the water dries and the jaggery has melted. Can be kept in the fridge for 3 to 4 days.
