Fried Bittergourd with Potatoes

  • 5 bitter gourds – Scrape and cut lengthwise into long strips, remove seeds. Fry in Mustard Oil till light brown and set aside.
  • 3-4 Potatoes – Peel and cut in the same shape as bitter gourd. Also fry and set aside
  • 4 tablespoon mustard oil
  • 1 tsp ghee
  • Pinch of asafoetida
  • 1 tsp cumin
  • 1/4 tsp fenugreek seeds
  • 1/4 tsp nigella seeds
  • 1/2 tsp dry ginger powder
  • 1 tsp fennel seeds, crushed
  • Kashmiri chilli powder
  • Green chillies to taste
  • 1″ ginger, crushed
  • 1 tsp coriander powder
  • 1/2 tsp garam masala powder
  • Salt to taste

Heat ghee, add asafoetida , cumin , fenugreek, fennel and nigella seeds . After a few seconds add fried bitter gourd and potatoes. Tip in half cup water and the rest of the spice including crushed ginger. Simmer for 15 minutes. Add in fresh coriander and cook till water has evaporated , shake the wok often to evenly coat the bittergourd and potatoes with the spice.
