Almond Date Cake

Almond date cake


  • Flour  – 1 ¼ cup
  • Demerra sugar – 200 gms
  • Dates ½ cup – boiled and deseeded
  • Almonds cut into pieces – 3 tbsp
  • Baking powder – 1 tsp
  • 4 eggs
  • Milk 1/2 cup
  • Butter 100 gms
  • Pinch of salt

– Seive the flour twice and keep aside
– Cream butter and sugar
– Next add eggs one at a time and keep whisking. Then add flour plus baking powder and salt. Next add the milk.
– Whisk the mix till it light and dropping consistency
– Add the boiled dates and combine well
– Pour in a grease tin and add the almonds
– Bake at 170c for 40 mins in a preheated oven
– Pierce and check, if when it comes out clean the cake is done
– Let it cool, then unmould and cut into pieces.
