Amara, Trident Hyderabad is hosting a Thai food fest, helmed by Chef Naphakphak Prompaksa, more popularly know as Tam from the famous Rim Naam restaurant, The Oberoi, Bangalore.
What hits you first and foremost is the high spice level. No, she isn’t pandering to the Hyderabadi piquant penchant. These are the authentic pungent levels of Issan cuisine, from the Northeastern region of Thailand.
Issan cuisine is famous for its spices and herbs, especially chilli peppers. And theres the eternal favourite flavours of kaffir, lemon grass, coconut milk and galangal. Chef Tam’s culinary creations are available for both lunch and dinner in many options – either the buffet, a set menu or even a la carte.
Here’s what I sampled from the set menu.
Loved the starters of chicken and prawn satay served with a peanut dip, the fish cakes with basil and raw papaya salad
Main course included a fiery Fish in Red Curry – loved the coconut and spices in the thick gravy; a spicy hot basil stir fry with lamb and a vegetarian mushroom and eggplant in pepper sauce.
Apart from the authentic Thai flavours, Trident has spent considerable attention on Thai-ising the decor as well. Like the elegant accents at the Chef’s Table for a memorable dining experience.
Dessert was a cooling (much needed after all the spice) Tum Tim Krob – jellied water chestnuts in sweetened coconut milk. Loved the delicacy of the flavours, with just the right amount of coconut milk to compliment the crunch of the water chestnuts. A fitting finale to an amazing dining experience.
Chef Tam’s Thai specials are available only till Friday, 9th July. The lunch buffet is priced at 1275 + taxes and dinner at 1350 + taxes. The set menu is available for both lunch and dinner at 2100 + taxes.
