Sweet, sour, bitter, salty and umami – you can experience all that and more at the ongoing Marwari food festival at Feast, Sheraton Hyderabad.
Here’s your chance to sample some popular Rajasthani favourites by Chef Sumit Kedia, a Marwari from the village of Khes in Rajasthan who has recreated the authentic rustic flavours of his ancestral cuisine.
Marwari dishes are primarily vegetarian, and given the aridity of this landlocked land where fresh produce is few and far between, their cooking is adapted to include more of pulses, spices, long-lasting foods, and milk products especially ghee which not only flavours the food, but also doubles up as a preservative.
My favourite from the extensive menu was the perennial pleaser dhal bati churma. The best part of this dish is its versatility – you can mix and match as much of the dhal, bati (deep-fried wheat balls) and churma (a sweet mixture wheat flour, semolina, sugar and spice) and top it up with ghee. Sinfully indulgent? Oh Yes!
Other must-try items are the ker sangria, a dehydrated bean and berry spicy curry that perfectly complements the hot off the tandoor bajre (millet) and missi (made from a combination of gram flour, wheat flour and dry spices) rotis and masala tikadias (crispy, spicy ghee rotis).
There’s also a live counter where chefs dish out Papdi Chat, Palak Patta (spinach leaf) Chat, Golgappe, Tawa chat, Kachori with Chana aur Moth (chickpeas and green gram), Moong dal chillas and and Kesariya malai doodh (saffron milk). Be warned, they’re highly addictive and its tough to stop at just one serving.
You’re sure to overeat at this delicious buffet but do remember to save some space for the absolutely delightful Ghewar with rabdi and the Kesariya jalebi. Trust me, you won’t be disappointed.
The feast sure lives up to the festival’s tagline of ‘Authentically Royal, Traditionally Loyal’. It’s on till 25th November, 2016 as part of the Sheraton’s buffet spread ais is available for both lunch and dinner at Rs1175 + Taxes.
