What happens when Tuscany, Trident Hyderabad’s fine dining Italian restaurant feels gastronomically neighbourly? French cuisine makes a fashionable debut on its menu and Hyderabad gets treated to Rome Meets Paris!
Its ongoing food promotion brings to the table a delectable selection of the best from both culinary haute spots – France with its perfectionist standards right from ingredients to cooking techniques to presentation, and Italy with its simplicity where its cuisine depends largely on fresh ingredients rather than elaborate preparations.
Invited to sample the myriad flavours of both country’s cuisines at an exclusive bloggers table, I got to taste their best offerings from the menu. Executive Sous Chef Prafull Aina created magic with French and Italian dishes for every course at dinner. Lets start at the very beginning – the appertisers.
The Panzanella, a traditional Tuscan salad made with day-old sourdough bread and fresh garden vegetables tossed in olive oil brought out the flavours of the tomatoes, bell peppers and onions to whet your appetites for the main course.
But wait, there was also the Salad Nicoise – a classic French salad of perfectly seared tuna tossed with hard boiled eggs, olives and asparagus. The tuna was seared just enough to look like a piece of art – brown on the outside, pink on the inside with bursts of flavours with every bite.This was followed by Chilled Vichyssoise, a thick French soup of puréed leeks, onions, potatoes, cream. While this was a light textured tantalizing refreshment, the Ribollata, a robust Tuscan hot soup made of bread crumbs and vegetables had us eating it rather than drinking it! Reminded me of minestrone sans the pasta.
The mains consisted of Ratatouille, a traditional French Provençal stewed vegetable dish, originating in Nice, made internationally famous by Remi the animated French rat chef. Couldn’t help smiling to myself while trying this. And that merry mood continued through to the Caq au vin. Could it be due to the wine that the chicken was braised in? Hmmm. Add to that an earthy and robust Lamb Navarin, a French stew in which the lamb shank is slow cooked with root vegetables.And for the grand finale – the Cassata, raspberry coulis and nut meringue, a classical Sicilian dessert layered with candied fruits, nuts and strawberry ice cream covered with almond marzipan. Unfortunately I don’t have a pic to share of that absolutely decadent dessert. I was too engrossed in devouring it to click a pic! But here’s a pic of the other dessert I had. The Paris Brest, another french wonder made of choux pastry and praline cream topped with fresh fruits. Parfait!
These are just some of the items from the extensive menu. This European tour de haute cuisine force is on only till 3rd July, and only for dinner. So make that reservation now before it’s time to say Ciao to all that amazing fine chow.
