White Lentil Dhal

Urad ki Dal

  • 1 cup urad dal (white lentils)
  • 7-8 garlic cloves chopped
  • 1 tbsp ginger chopped
  • 1-2 green chilli chopped
  • 2 dry red whole chillis
  • 1 tsp cumin seeds
  • 3/4 tsp turmeric
  • salt to taste
  • 1/2 tsp red chilli powder
  • 3/4 tsp garam masala
  • 1/4 cup tomato puree
  • 3-4 curry leaves
  • 1 pinch asafoetida
  • olive oil
  • water

Wash the dal well. Add olive oil in a pressure cooker on medium heat. Add cumin seeds, dry red chillies, asafoetida, curry leaves. Let the cumin seeds splutter, then add garlic and sautee until light brown. Add ginger, green chillies and sautee for a couple of minutes.

Then add tomato puree along with salt, red chilli powder, turmeric, and garam masala. Roast the masala until you it leaves the oil.

Add the washed and drained dal to the mixture. Mix well and stir for a few minutes.

Add about 2-3 cups water and put the lid on the pressure cooker. Let it cook until 3-4 whistles and do not open until the steam goes down. After opening the pressure cooker, if you think the consistency is too thick then you can add a little boiled water and let the dal boil without a lid. When you get the desired consistency turn the gas off. Pour the dal in a serving bowl. Serve hot and garnish with cilantro and some lime juice before serving.
