Tomato Rice

  • Rice 2 cups
  • Tomatoes – Finely chopped 4
  • Ginger-Garlic paste 1tbsp
  • Oil 4-5 tbsp
  • Tomato paste 3-4tbsp
  • Coriander powder 1tsp
  • Onion finely chopped 1 medium
  • Turmeric powder 1/2tsp
  • Green chillies 4
  • Chicken OR Vegetable stock cubes 2 + 3 cups of water
  • Salt to taste



Wash and soak rice in plenty of water for at least 20-30 minutes

Heat oil in a pan, add onions and saute – don’t let them brown just translucent and add ginger-garlic paste.

Next add the chopped tomatoes, tomato paste, coriander powder and turmeric powder and fry well.

Reduce the heat and let it simmer to a thick sauce.

Add stock cubes with 3 cups of water and bring to boil. Add drained rice and green chillies and let it cook till the water is absorbed and rice is well cooked.

Serve hot.
