Urad Dhal Puris

Urad Dal puris 16 July 2014

500gm white urad dal
8 red dry chillies,
1 tbsp fennel seeds
1 tbsp coriander seeds
whole garam masala (2 cloves, a stick of cinnamon, 2 green cardamoms)
1 tsp fenugreek seeds
1 tsp cumin seeds
1 tsp dry ginger powder
a pinch of asafoetida
salt to taste

Roast all of the above ingredients, dry grind to a fine powder and store in an airtight bottle.

Add this mixture to your dough while making puris. Quantity depends on your preference. I usually make it with a 1:4 ratio – One portion of urad dhal mix powder and 4 portions of wheat flour.
