This is one of my favourite hors d’oeuvres. They’re incredibly easy to make and yummy!
- Cherry tomatoes
- Pesto sauce
- Pine nuts
- Olive oil
Cut the tops of tomatoes and deseed them. Use firm cherry tomatoes as they stand well and look more appetizing. The ones I got were a bit ripe and wouldn’t stand so I cut the bases just a bit. Don’t chop off too much, or the filling won’t hold.
Fill tomatoes with a paste of pine nuts, pesto (I used bottled pesto) and a bit of olive oil. Serve chilled.
There’s no fixed ratio of pesto and pine nuts. I usually use half a cup of pine nuts mixed with one tsp of pesto. If there’s any of the mix left over, I use it as a sandwich spread.
